Here's a meal that I had ready to serve in no time. First, throw together the easy Spicy Black Bean Salad (or just the Black Bean Salad - hold the jalapenos - if you're not a spicy person). Then makes some quick shrimp fajita-tacos.
Serve make-your-own-taco style with warmed tortillas, shrimp and veggies, a cold slaw, salsa, and cheese and sour cream (optional and not part of my balanced running diet).
Eat both and enjoy!
