My final dessert to share (for now, at least) are these fun and happy cake pops. I saw a similar recipe for cheesecake pops in Food Network Magazine, but instead of buying the frozen cheesecake at the grocery store, I bought frozen pound cake instead. My one suggestion is to purchase proper popsicle or lollipop sticks instead of these cheap drink stirrers. They look incredibly festive but slide right off the stick when you try to pick them up. Luckily, at a party no one cares.

Makes 50 Pops
Total time: 30 minutes
Ingredients
1 frozen pound cake
8 ounces, bittersweet chocolate
Lollipop or small Popsicle sticks
Sprinkles, jimmies, coconut, other fun toppings
Instructions
Cut pound cake into 1-inch cubes and place back in freezer until ready to use.
Melt chocolate in a bowl and place toppings in individual bowls or on individual plates. Lay down aluminum foil on a cutting board or piece of cardboard that will fit on a flat surface in your freezer for after the cake pops are made.
Remove cake cubes from freezer. One by one, insert stick into the cake cube (not all the way through), spread chocolate on sides using a brush or spatula, roll or sprinkle all sides with coconut or other topping.
Place stick up on foil. Repeat until finished with all cubes.
